While you are there, you need to take in the AF Armament Museum at Eglin AFB and the Naval Air Museum at Pensacola NAS. I throughly enjoyed them both in the same day. Not to far from Panama City, just take Hwy 98 and head West.
If you could only hit one of these, get out to Pensacola first. I estimate that they have 7x the amount of planes plus the IMAX movies. Both locations are free to enter, though the one in Pesacola is located on the naval base, so you'll have to go through security, not a problem though. The one at Eglin is fair, but you can go through there in about 90 minutes. They do have a SR-71 blackbird... man I like that plane.

While you are at Panama City, there is an airshow at Tyndall AFB (Panama City Beach) on April 22/23 with the USAF Thunderbirds as the headline. Tyndall is a great place for the airshows as the sun is behind you while the show is happening. LOTS of static displays and the typical food/drink/etc. You will want to get there as the gates open as the security lines (like at the airport) get really long!! Bring the sunblock! :D

Here is a GOOD tip if you attend Tyndall. There is a cheap soda machine (has been there for a few years going now) to the right, down near the barracks/offices (and smoking area). Basically towards the bombers static displays.
