I was told by a friend that there's a spray for carpets that will 'seal' them so that if anything spills it won't go into the carpet. Anyone know what that's referring to or have advice on how to best keep the carpets in good shape?

Scotchgard makes a spray for carpets. It is a silicon polymer that seals out liquids and dirt from getting buried in the fibers. It works pretty well, but will have to be done every so often. There are other manufacturers out there, but the ones I have seen are silicon polymers.
