I filled up my truck a few days ago and when i started driving I noticed my gauge was completly on E and the low fuel warning light was flashing? I drove 30 miles and it stayed like this the whole way.

When i got to my destination i cycled the ignition and all was well again?

What gives, anybody have any ideas why this would happen?

Have you removed the dash instrument panel for any reason? iPod adapter? Satellite radio? Alarm?

I took the trim piece off once 6 months ago to add something to the stereo. Didnt take the instrument cluster out just the trim. Havent seen this issue before. Seems too conincidental that it happened right after filling the tank.

What are you thinking?
 
I'm thinking you have a loose connector behind the instrument panel. there's a bunch of them. Either that or a failing battery or a bad ground.
 
One time I filled up and the gauge took about 10-20 minutes to go from E to 1/2 tank and it stayed at 1/2 tank. I was driving cross country at the time, and finally the gauge started moving down as the tank emptied. I had filled the tank all the way as evidenced by the miles I drove before the gauge moved off of 1/2 tank. At the next fill up the gauge acted normally again. This only occurred one time in 70,000 miles for me. Very, very odd. I hadn't thought about it much until I read your post.

Maybe a piece of crud got caught in the fuel level sensor?

So I refilled my truck again (dont drive it very often) and when i started the truck back up my fuel gauge read E and yellow light flashing. I drove a few miles and it would read full at times, until i went up/down a steep enough hill and it would go back to E and yellow flashing light. Then a few miles later normal again? Something isnt happy when the fuel level is high, but what?

I do not leave my keys in the ignition.
 
Sounds like a faulty fuel level sensor ("sending unit") to me. It is designed the output a range of resistance values that correspond roughly to the fuel level in the tank. If outside this range, the vehicle is assuming a faulty fuel level sending unit and will flash the low fuel indicator. You should also have a DTC (diagnostic trouble code) set that will reinforce this guess.
