Which tires for fuel mileage??

I would assume most would say OEM. Which is fine but I am looking for something with a little more off-road traction. Is there a tire that will give me some more bite but not give up any fuel economy?

No. The only tire that really helps with mpg is low rolling resistance tires. Will you be able to find ones suitable for this vehicle and is it worth it, it's your call.
There's also opinion that NO2 filled tires give better mpg, but it's dubious opinion.
OVERINFLATING helps with mpg, but kills your suspension fast and furious:act064:, unless you have TN type roads where you at.

I just had Goodyear Assurance CS Fuel Max tires put on my 2006 Ridgeline and haven't had a tank below 18 MPG. The set of 4 tires set me back about $900 but I'm already making up that $ in the fuel that I'm saving over my winter tires (Michelin Latitude X-ice).
I did notice that you pick up a bit more sensation of bumps (slightly more than the stock Michelin LTX's) but it really isn't that bad. It seems like these run a bit quieter than the stock LTX's - at least at highway speeds. These are way quieter than my winter tires.
I'm guessing that I'll get about 21 or 22 MPG if its all highway - maybe more if I keep my foot in check. My truck is stock and I've been running plus (89 octane).
